This is one of my favorite soups from home. It is inspired by the Chayote, from Central America, and several dried Asia ingredients, like mushroom, shrimp, and lychee.

Ingredients:
- 1 whole skinless chicken with bones
- 2 chayotes
- 6 dried mushrooms
- 1 teaspoon of dried lychee
- 1 teaspoon of dried shrimp
Steps:
- Get a medium size pot and add just enough water to cover the chicken, then boil this
- in the meantime, hydrate your dried chinese mushroom for 30 minutes in warm water
- add all the ingredients and cook for 1 hour
